Whole30 – Day 22

Whew!  I survived the sweetest day of the year and didn’t eat a single piece of candy.  Just opening the bag to dump it into a bowl for the trick-or-treaters was torture.  I never realized candy could smell so strongly through the wrappers, but let me tell you it sure can.

I came to a realization today as I began shopping and cooking my food today.  I actually really like eating whole food and I really don’t want to eat processed crap…except that candy, I really did want to eat that, lol.  But seriously, I feel like my taste buds have changed so much in the last 22 days and I’m really enjoying eating food that looks like what it’s supposed to look like and that doesn’t have ingredients I can’t pronounce.

I only had one day off this week so I tried to simplify my cooking as much as possible.  I ended up making three crock pot dishes.  Luckily I own two crock pots so that helped with time.  I was just happy to not spend all day on my feet in the kitchen, but it still did take quite a bit of time.

Top to bottom let to right I made: Paleo Leap’s Oven Roasted Garlic CabbageNom Nom Paleo’s Slow Cooker Roast Chicken and Gravy, roasted carrots parsnips and cauliflower, Pure and Simple Nourishment’s Texas Slow Cooker Beef Chili, roasted rutabaga and turnips, mashed sweet potatoes, and chicken curry.

I had a panic moment earlier today.  I went to the bathroom and thought I was dying.  My pee was reddish-pink which is usually not a good sign.  I started drinking massive amounts of water because I was sure something was very wrong.  Then I thought about what I had eaten today and remembered I had eaten at least one whole red beet and another golden beet.  I googled it and found out that beets can actually dye your urine.  Totally crazy and thankfully I’m not dying after all!

I seriously can’t believe that I’m starting week four already.

Whole30 – Day 18

Wow!  I can’t believe this 30 days is nearly 2/3rds of the way done already.  It feels both long and short all at the same time.

I’m not sure what the deal is but today I really wanted anything sweet.  I bought a bag (Costco size bag) of candy for the trick-or-treaters and it’s sitting in the same cabinet as my Starbuck’s Via coffee.  It literally hasn’t bothered me until today.  I thought this was supposed to get easier, not harder?  Not that it’s hard exactly, I just feel like I’m craving things more lately, like a glass of wine.  Damn that sounds good.  But here I am writing my blog, without chocolate in my hand, and drinking some herbal cinnamon apple tea.  Oh well, what are you going to do?

Breakfast

More of the same and I’m still not tired of it.  Two poached eggs on top of crack slaw and spinach.  Possibly the world’s most perfect breakfast!

Lunch

Lunch was kalua pig and cauliflower rice with mayo mixed in after it was heated.  I finally remembered to slice up my fennel and I ate that raw and also had a still not ripe persimmon.  I seriously need to find out if there’s a way to make these ripen faster because I’m dying to try a really ripe one (they are supposed to be super sweet) but I think I’m going to eat them all before they even hit the ripe stage.  I sprinkled cinnamon on top and it’s good.  I like them either way, with or without cinnamon.  One of the blogs I read said that they thought these tasted like Christmas.  Hmmm, I’m sure not feeling that at all.  But I guess different people can have different idea of what Christmas tastes like.

Dinner

I got really creative for dinner tonight.  Any by creative I mean I threw things in a blow and stirred it all together and hoped for the best.  Actually it was pretty good.  I’m going to call it “kitchen sink”, because if it would have fit I probably would have added it to the bowl too.  I added spaghetti squash, coach slaw, ranch dressing, and lots of Frank’s Red Hot sauce and mixed it up.  It was like buffalo chicken wings….but not chicken wings.

I went for a long walk again after work today…in the rain.  I ended up soaked by the time I got home but it was still nice and relaxing to be outdoors.  I’m currently listening to the audiobook of Wild, by Cheryl Strayed.  It’s a factual account from a woman (Cheryl) who walked the Pacific Crest Trail (PCT) by herself.  I’ve been dying to hike the PCT, or even parts of it, for about 15 years now.  I’m currently in no shape for it…but then again neither was Cheryl when she started out.  It’s something I’d still love to do, but I would certainly do more research than she did before setting off.  Personally I love to hike.  I never get to do it very often which is a total bummer.  I love being in nature and I think it would be a beyond amazing experience.  I guess I’ll have to put it on my bucket list.

Whole30 – Day 2

I slept like a rock.  I’m not so sure this had anything to do with Whole30 or if it was because I wore my earplugs to bed and was exhausted, but it could be.  They say sleep gets better throughout the program but I think day 1 is a bit early to be experiencing that.  I still didn’t feel rested when I woke up though.  I felt like I wanted to stay all nice and snuggled under my blankets.

I woke up with a horrible headache, which isn’t that unusual for me.  I felt like I hadn’t slept at all, which also isn’t unusual.  I did, however, feel like I had been in a much deeper sleep than normal so that’s a good thing!

Breakfast

Breakfast looked a whole lot like yesterday’s breakfast but I decided to wilt the spinach and warm the spaghetti squash in the same pan to save time and dirty pans.  I made two poached eggs which turned out perfect again!  Who knew I had hidden poached egg talent?  Certainly not me.  I added some olives to help meet my fat criteria.  They added a nice salty tang to the dish!

Lunch

Lunch was a mess.  Not the food but the actual event.  Work was crazy busy and my lunch was delayed until about 5:00 AM (I normally eat at about 3:00 AM).  To make matters worse I had been hungry since 1:00 AM so I really wanted that food.  I don’t think I brought enough for my lunch either because I was not completely satisfied after eating but it did tie me over until I got home for dinner.  It didn’t help that G decided to eat one of those cellophane wrapped rolls of chocolate glazed donuts while drinking a chocolate milk.  Can you say mean?  I wasn’t wanting the milk but damn those donuts looked good.  Luckily my food tasted great so it wasn’t that tempting.  He didn’t offer to share either so there was that.

I had some of the left over filling from the stuffed peppers which consisted of ground beef and butternut squash, cold thai salad with sunshine sauce, and no sugar added applesauce.

Dinner

By the time I got home for dinner I was starving.  I decided to eat my leftover chicken chowder from the previous day.  There wasn’t much left but it tied me over while I cooked my fried eggs.  This was my first attempt at frying eggs and let me say I do not have the same skills I do with poached eggs with the fried eggs.  They were still edible though and went nicely topped over some of the crack slaw.  The gooey yolk added a nice flavor.  I know this is only day two but I’m really loving the crack slaw.  I think I could make it every week and still eat it.  I guess we’ll see if that holds through another 28 days or not.  I also had a side salad with home made ranch dressing.  I’m really bummed that this is only the second salad I’ve eaten from a huge Costco bag and it’s going bad already.  I really have to learn to look at “sell by” dates more closely.

Okay, recap time!  According to the Whole30 timeline, it’s common for days 2-3 to be “hangover” days.  I certainly woke up with a bad headache that did bother me a few times throughout the night but nothing major, just annoying.  It probably helped that I was super busy too.  I’ve been so hungry today.  Yesterday I was worried about my portion sizes and today I’m like “Screw it, where’s the food!”  My pants that were already pretty big on me feel bigger but that could totally be in my head too.  I’m so tempted to weigh myself to try to see what’s going on with my body but I won’t.  I know that is not really a true indicator.  My stomach issues have resolved themselves.  Even if it’s only temporary I’m thankful for this.

Alright, weirdest observation of the day….I actually craved chocolate.  I really never crave chocolate.  It was the kind of craving where you can actually almost taste it you want it so bad.  Weird thing is, it wasn’t when G was eating the donuts.  In fact it happened when there was no chocolate around.  I was at the doctor’s office checking in for some lab work and I’m talking to the receptionist who is taking forever and I just suddenly wanted chocolate SO BAD.  The good news is that it passed quickly.  Like I said, I was already really hungry at that point and I’m starting to understand that my body is and has been running off sugars.  I think my craving was my body trying to get me to eat what it is used to having for energy.  Either way I survived day 2…and so did everyone else!
