Whole30 – Day 6

Let’s see….I’ve been awake for 20 hours as I’m writing this so if it makes no sense you’ll know why.  Just finished up my first work week on Whole30 and honestly I feel like it went pretty well.  Other than the super tiredness (for very obvious reasons today) I feel like me, no better or worse than usual.  Compared to how I’ve heard it could be going I think that’s a win for me.  I’ll tel you what though, I can’t wait to start feeling more energized.  Maybe even enough to get my butt back in the gym.  I’m not going to rush things though.  On top of all the other changes adding workouts right now does not feel like a good idea.

Breakfast

Breakfast was scrambled eggs mixed with spinach, spaghetti squash topped with clarified butter, and some green olives.  I’m really running out of food which makes me feel like I planned the quantity well, even if not so much the actual contents (too much sweet potatoes, not enough meat).

Lunch

For lunch I ate my last stuffed bell pepper, the remains of the cold thai salad, and some unsweetened applesauce.  It might be a first for me but I actually didn’t eat all the applesauce.

Snack

I didn’t get a picture of it but after I got off work today (my Friday) G and I drove two hours to get to the mall and I was STARVING.  Believe it or not I managed to find something to tie me over at Starbucks.  They had some fresh fruit (apples, grapes, and oranges) and a drink I can’t remember the name of but it was coconut water and pineapple juice.  Not the best since between the fruit and fruit juice that was quite a bit of natural sugar but it was far better than the Cinnabon cinnamon roll G ate.  Damn I wanted one so bad.

Dinner

Dinner was my first successful meal at a restaurant.  I hadn’t thought about it at all but we drove past a Chipotle and G thought that sounded good.  Since we don’t have one where we live I wasn’t familiar with the menu.  I got the salad with no dressing and added the chicken (can you say amazing), veggies (bell peppers and onions), medium green salsa, and avocado.  The staff was awesome they quickly and easily answered my questions when I asked what was in the salsa and avocado without looking or sounding annoyed and I found out there was nothing bad in either.  The scoop of avocado was so big and it tasted amazing.

I have to pat myself on the back just a little.  The fact that I’ve been tempted many times this week (mostly by G) and have even been in situations where compliant food was not readily available I have still managed to succeed.  Although willpower is probably easiest this week I feel like once I actually start to feel some of the amazing side effects (better sleep, more energy, less aches and pains from reduced inflammation to name a few) then I feel like this will be a no-brainer life changer.  At least that’s what I’m hoping for.

Food shopping tomorrow and cooking tomorrow night.  Who’s ready for some new food?  I know I am and I’m sure you are too.  I’ve been getting a lot of requests for the Crack Slaw recipe so I’ll share that with you all tomorrow.  I’ve already said at least a million times how good it is.  I’ll say it again, it’s so good I’m making it again for next week.  I think that’ll be the only repeat though but my final list isn’t ready just yet.  Stay tuned!

Whole30 – Day 5

Today’s post is going to be short and sweet.  I was exhausted, and I mean really exhausted all night long.  Partly because I only got seven hours of sleep (that may sound like a lot to some of you but I do much better with eight or nine and even then I’m tired) and partly because I think I might be slightly ahead of the timeline.  According to the timeline today was day two of “Kill all the things”.  I only slightly wanted to kill someone and it passed very quickly.  The tiredness by far overtook any other feeling I had.  Not even coffee helped.  Anyway, on top of the tiredness I had an appointment after work and didn’t get home until five hours after getting off work.  SO TIRED.  I’m aware I sound like a broken record.  That’s just the way it is today I guess.  My bed is calling me as I type.

Breakfast

I did something a little different for breakfast.  First I wilted the spinach, kept it in the pan and added some crack slaw brought that all up to temperature then made a hole and added two eggs and scrambled it all together.  It was really good and I made a ton.  At first I thought it’d be too much, and I’m sure I could have been okay with a slightly smaller portion but I ate it all and it was good!  Especially good since I didn’t eat lunch until 5:30 AM.IMG_8078 IMG_8079

Lunch

Lunch was another stuffed pepper, some balsamic sweet potatoes and brussels sprouts, and a green salad with ranch dressing.

Dinner

I was so over the day by the time I got home that everything ended up in one bowl.  I heated some chicken chowder and mixed in some spaghetti squash, then topped it with an avocado.  Would have been better with some hot sauce but it wasn’t bad and I was starving so that made it even better because now I’m full and ready for bed.

I’m not going to lie, as much as the pictures may be starting to resemble each other I’m also getting slightly tired of eating the same things over and over again.  I realize this will be the end of pretty much every week and I’m okay with it.  Again, I really should have made more protein than I did and next will I will for sure eat less sweet potatoes but I am totally still in this 100%.  Even though I’m tired of the same things I’m not a picky eater and I only kinda want something different for variety.  I could seriously eat the crack slaw every single meal but you all would get really bored with that no doubt.

Good night day five!  This girl is calling it a night….or um day I guess.

Whole30 – Day 4

I can’t believe it’s day four already.  I realize there is still a long way to go but I’m so proud to have made it this far.  For anyone out there thinking of giving this a try (and I encourage that) I honestly think the thing that has saved me from screwing up the most was doing my cooking, or at least the majority of it, on my weekend and being prepared.  There hasn’t been a time yet that I’ve not had the food I needed to be successful and felt that I had to eat something immediately that would throw me off.  Even though it took 6 or 6 1/2 hours with cleanup it’s been totally worth it.

I woke up today after not really sleeping good feeling okay.  I don’t really seem to have any headache but I have some other weird body aches and pains that started yesterday.  For some reason my right shoulder is aching, the tendonitis in my right wrist is acting up bad, and my right foot big toe is painful in the joint when I walk.  I’m not sure what brought any of this on as I haven’t done anything physical that would be making me hurt, especially the tendonitis.  I haven’t had that act up this bad in a long time.  Maybe my body is working on repairing itself and that’s painful?  I don’t know.  I have always heard that the body heals through inflammation, and as long as it’s not prolonged then maybe it’s a good thing.  Wishful thinking probably but I’m hoping so.

Breakfast

I decided to stray from the poached eggs today and went fried.  Living on the edge I know.  They did come out better than the last time I attempted fried eggs but I broke one of the yolks trying to get it out of the pan.  I don’t care though, it still tasted delicious.  What is it about fried eggs that makes them stick so bad?  It doesn’t matter how much cooking fat I have in the pan, they stick like crazy.  I ate the eggs on top of some crack slaw (still my favorite thing since I quit eating sliced bread) and some avocado on the side.  It was a great breakfast and kept me satisfied until I ate my lunch.

Lunch

Lunch consisted of a ground beef and butternut quash stuffed orange bell pepper and some spaghetti squash.  I brought ranch dressing for my fat and ate it on both lunch things and it was so good.  The spaghetti squash reminded me of an alfredo.  Obviously it didn’t taste the same but it had a nice creamy texture and it just added a really nice tangy flavor to my stuffed pepper.

Snack

Snacks aren’t technically allowed on the Whole30, but they aren’t such a detrimental cheat that you have to restart the plan.  I couldn’t come straight home from work and I felt like I was going to be so hungry I’d eat whatever was in front of me if I didn’t get something in my stomach.  I went to Safeway and looked and looked for something to get that would be easy, require no utensils or microwave, and wouldn’t be too much of a cheat snack.  I ended up getting a Safeway Organics Kombucha in the flavor Pomegranate Hibiscus Lime.  I’ve only had Kombucha once or twice before and it was probably the added sugars type.  I thought I liked it at least okay before but this was rough.  I really didn’t like it but I drank half anyway.  I know it’s essentially vinegar, or close to it, but this was very sour.  I also found some olives at the olive bar.  I got a few garlic and a few hot pepper flavor.  It was so hard walking past those chips and cookies but I did it.

Dinner

Dinner was nice and easy today since I got home late.  The only prep that needed to be done was to throw the chicken chowder and the remaining stuffing from the bell peppers into the microwave.  I’ve been trying to do a lot better and reheat a lot of things on the stove because I’ve heard the microwave kills a lot of the good stuff in our food but I was just too impatient to wait.

Overall today was a really great day.  My joints are still hurting and I still don’t know why and I was unusually tired today but I had a really great night at work so that got me through.  Days 4-5 are supposed to be “Kill all the things” days and I honestly didn’t feel that at all.  I’m semi-worried that if I’m not feeling the things the timeline says I should be feeling that maybe it’s not working but I think maybe due to my illnesses I’m just used to feeling like crap so this is really no big deal.  I obviously don’t need a special eating plan to be a bitch!

Whole30 – Day 3

13 Oct

Day three is done!  I don’t know if I’m having a delayed reaction or what but I’m really not feeling that bad.  I woke up today and didn’t have a headache but I was extremely tired.  The tired feeling remained throughout the day.  The book tells you numerous times that you’ll need extra sleep during this time and I’m finally starting to believe it.  Whatever medical issues I have been having previous to starting Whole30 has left me tired all the time but this is a new level of tired.  It’s like a drained tired.  I can’t wait for that to turn around though!

Breakfast

I wasn’t messing around today!  I didn’t want to be hungry at work all day so I made an extra poached egg for a total of three on top of my wilted spinach (noticing a trend yet?).  I also had part of an avocado, some sunshine sauce, and some of the balsamic sweet potatoes and brussels sprouts.  I was sad because I cut the avocado open and part of it was bad so I cut out the good stuff and just ate that.  The good news is that I made it just fine until lunch with no hunger pangs!

Lunch

Lunch was a bowl of chicken chowder and some green olives.  Nothing too fancy but it was good and filling.  Easily made it until I was home to eat dinner and again wasn’t hungry.

Dinner

I finally tried my ground beef and butternut squash stuffed peppers!  They’re good, but not my favorite thing so far.  Obviously variety is good and I’d make them again.  I also had some spaghetti squash topped with sunshine sauce.  I do not recommend this combination.  It wasn’t good at all, but I ate it.  Luckily I’m not a picky eater and I realize I’m eating for a purpose other than pleasure.  I will say this though, my experience so far has been mostly pleasurable.  Other than extra dishes and time spent cooking I’m really enjoying the food and enjoying real food.  And lastly I had a plum!

Overview of the day: it was a good one!  I don’t feel terrible and I don’t feel amazing.  I didn’t have any crazy cravings.  I’m feeling like my stomach is just as big as it has been but for some reason my skinny jeans that are a size smaller than the ones I wore yesterday are feeling looser than they did.  Maybe they’ve just stretched out with wear or maybe this is actually starting to work!  Only another 27 days until we all find out.  Ooooh the suspense!

I’m already compiling a list of what I’m going to cook next week and I’m excited to try some new things.  I will say this, I should have cooked more meat than I did this week.  The chicken chowder doesn’t seem to have that much meat per serving, certainly doesn’t feel like one to two palm sized portions when I’m eating it, it’s mostly sweet potato.  I like sweet potato but I’d like to stick closer to the plan.  I also made the chicken salad which I can’t eat.  I looked at the can after I made it up and saw there’s corn starch in it.  Seriously?  Corn starch in chicken?  Why???  G won’t eat anything with mayo, not even real home made mayo so I guess I’ll have to throw it out.  What a shame.

WARNING: TMI TIME BELOW

I couldn’t leave you without some TMI today.  My stomach feels a bit bloated and gassy and I’ve eaten so much green that my poop is green.  And no, I didn’t cheat and have one of those black Burger King burgers.  Mine is the real deal, lol.

Whole30 – Day 2

I slept like a rock.  I’m not so sure this had anything to do with Whole30 or if it was because I wore my earplugs to bed and was exhausted, but it could be.  They say sleep gets better throughout the program but I think day 1 is a bit early to be experiencing that.  I still didn’t feel rested when I woke up though.  I felt like I wanted to stay all nice and snuggled under my blankets.

I woke up with a horrible headache, which isn’t that unusual for me.  I felt like I hadn’t slept at all, which also isn’t unusual.  I did, however, feel like I had been in a much deeper sleep than normal so that’s a good thing!

Breakfast

Breakfast looked a whole lot like yesterday’s breakfast but I decided to wilt the spinach and warm the spaghetti squash in the same pan to save time and dirty pans.  I made two poached eggs which turned out perfect again!  Who knew I had hidden poached egg talent?  Certainly not me.  I added some olives to help meet my fat criteria.  They added a nice salty tang to the dish!

Lunch

Lunch was a mess.  Not the food but the actual event.  Work was crazy busy and my lunch was delayed until about 5:00 AM (I normally eat at about 3:00 AM).  To make matters worse I had been hungry since 1:00 AM so I really wanted that food.  I don’t think I brought enough for my lunch either because I was not completely satisfied after eating but it did tie me over until I got home for dinner.  It didn’t help that G decided to eat one of those cellophane wrapped rolls of chocolate glazed donuts while drinking a chocolate milk.  Can you say mean?  I wasn’t wanting the milk but damn those donuts looked good.  Luckily my food tasted great so it wasn’t that tempting.  He didn’t offer to share either so there was that.

I had some of the left over filling from the stuffed peppers which consisted of ground beef and butternut squash, cold thai salad with sunshine sauce, and no sugar added applesauce.

Dinner

By the time I got home for dinner I was starving.  I decided to eat my leftover chicken chowder from the previous day.  There wasn’t much left but it tied me over while I cooked my fried eggs.  This was my first attempt at frying eggs and let me say I do not have the same skills I do with poached eggs with the fried eggs.  They were still edible though and went nicely topped over some of the crack slaw.  The gooey yolk added a nice flavor.  I know this is only day two but I’m really loving the crack slaw.  I think I could make it every week and still eat it.  I guess we’ll see if that holds through another 28 days or not.  I also had a side salad with home made ranch dressing.  I’m really bummed that this is only the second salad I’ve eaten from a huge Costco bag and it’s going bad already.  I really have to learn to look at “sell by” dates more closely.

Okay, recap time!  According to the Whole30 timeline, it’s common for days 2-3 to be “hangover” days.  I certainly woke up with a bad headache that did bother me a few times throughout the night but nothing major, just annoying.  It probably helped that I was super busy too.  I’ve been so hungry today.  Yesterday I was worried about my portion sizes and today I’m like “Screw it, where’s the food!”  My pants that were already pretty big on me feel bigger but that could totally be in my head too.  I’m so tempted to weigh myself to try to see what’s going on with my body but I won’t.  I know that is not really a true indicator.  My stomach issues have resolved themselves.  Even if it’s only temporary I’m thankful for this.

Alright, weirdest observation of the day….I actually craved chocolate.  I really never crave chocolate.  It was the kind of craving where you can actually almost taste it you want it so bad.  Weird thing is, it wasn’t when G was eating the donuts.  In fact it happened when there was no chocolate around.  I was at the doctor’s office checking in for some lab work and I’m talking to the receptionist who is taking forever and I just suddenly wanted chocolate SO BAD.  The good news is that it passed quickly.  Like I said, I was already really hungry at that point and I’m starting to understand that my body is and has been running off sugars.  I think my craving was my body trying to get me to eat what it is used to having for energy.  Either way I survived day 2…and so did everyone else!

Whole30 – Day 1

Day 1 is officially in the books as a success.  It feels good to have finally started when this is something I’ve known I was going to do for several weeks now but have had to wait for several different reasons (flu, blood draw, and other medical tests).  I don’t think I’ve ever eaten this many vegetables in one day ever…and I like vegetables I just don’t like preparing them.

I started my day out with a black coffee!  I drink my coffee black at home pretty regularly even before starting Whole30 so that’s not been a hurdle for me.  I love the Starbucks Via packets because they are quick and easy and also Whole30 compliant.

Breakfast

I did two things during my first meal that I have never done before.  I made poached eggs!  I always thought it’d be difficult but it’s not at all.  I think the secret is the apple cider vinegar in the water.  They came out perfect, done on the outside and still runny on the inside.  I also made wilted spinach.  It was so good.  I made about half a bag which cooks up so much smaller.  I used coconut oil and added salt, pepper, and garlic powder for seasoning.  I also heated up some of the spaghetti squash and sliced up a plum.

Lunch

For lunch I heated up some of the Crack Slaw and the Balsamic Sweet Potatoes and Brussels Sprouts and added half an avocado to meet my fat goal.  It all reheated nicely.  I’m so thankful to have done the majority of my cooking ahead of time.  Even though today was a day off from work I just don’t love spending a ton of time in the kitchen.

Dinner

I decided to have a bowl of Chicken Chowder and a side salad with the other half of my avocado from lunch topped with home made ranch dressing.  The chowder might look funny but it tastes delicious!

I’m really surprised I didn’t even finish my entire dinner.  I only ate about half the soup, which means I did not get the recommended amount of protein for dinner.  I don’t know what it is but I can eat a lot and I find myself feeling much fuller than normal.  I know I have eaten way more food than I normally do and I’m not going to lie, that freaks me out.   In my mind more food = more pounds and that is the opposite of what I want.  That doesn’t mean I’m not going to eat as much as I’m supposed to, because Whole30 is not about being hungry all the time or being low calorie, but I do think I need to rethink my portion sizes.  I’m STUFFED.  Part of Whole30 is to learn to quit eating when you are satiated, not before or after.  I have a feeling that’s going to take at least 30 days to learn for me.  I’m trying really hard to eat at my dining room table and to only eat, no phone, iPad, laptop, or TV.  Easier said than done.

Okay now for the TMI portion of my post.  Please stop reading if you really don’t want to know, lol.

Really….I mean it…stop reading if TMI bothers you or if you’re not okay with me being completely honest with the process.

Alright, here it goes.  I’m not sure if it’s the increase in vegetables/fiber in my diet, or maybe the fats, but I’m experiencing diarrhea today.  I had the flu about two weeks ago and this is feeling like deja vu.  It started about three hours after breakfast and continued throughout the day.  I looked all over the Whole30 Forums and couldn’t find anyone complaining of diarrhea on day one.  Maybe I’m just such a perfectionist that my body decided to skip ahead?  Kidding!  I really don’t know what’s going on but I feel fine other than the frequent trips to the bathroom.  Really hoping it stops soon though.  The good news is that it subsided quite a bit after lunch.  Hopefully all the bad things are gone now, lol.
